Tailgating Recipe: Loaded Corn Dip

Serves: 4

  • 8 ears fresh sweet corn
  • 32 oz cream cheese (softened)
  • 4 c. shredded cheddar
  • 2 c. bacon crumbles
  • 4 jalapeƱo peppers (chopped)
Loaded Corn Dip


  1. Wash and dry all produce.
  2. Preheat oven to 350 F.
  3. Using a sharp, serrated knife, cut the kernels off all the corn.
  4. In a mixing bowl, combine the corn, softened cream cheese, cheddar cheese, bacon bits, and chopped jalapeƱos.
  5. Mix until well blended.
  6. Add to an oven-safe baking dish or casserole dish.
  7. Bake a 350 F for 20 minutes and serve hot.
  8. Optional step: remove from the oven and top with another layer of cheese, then broil for 2-3 minutes to get a crispy topping.
